Preheat your oven to 350 degrees.
Seasoned potatoes: Cut about 5 idaho potatoes into bite sized pieces and chop up 2 small onions. Place into a greased baking dish. Add 2 tablespoons of butter or margarine, cut into pieces on top and 1 teaspoon of the following spices: garlic, italian seasoning, adobe, basil, cheyenne pepper, and about a palm full of seasoning salt, mix together.
Optional: Spinkle your favorite cheese on top.
Bake for about 45 minutes to an hour, or until potatoes are nice and soft.
Tip: Put under your broiler to make the potatoes brown and crispy on top!
Meatloaf: In a bowl, combine 1 pound of ground chicken, 1/2 cup of oatmeal (or bread crumbs), 1/2 of a small onion, minced (about 1/4 of a cup). 1/2 teaspoon of italian seasoning, garlic, and pepper, 2 pinches of salt, 1 tablespoon of worcestershire sauce, and mustard.
Put into a greased rectangular baking dish, perhaps a bread pan, pack gently.
Sauce: In a bowl, combine 1/2 cup of ketchup and 1/4 of a cup of honey (or brown sugar) and pour evenly on top of the meat loaf.
Bake for 20 to 30 minutes.
Serve and enjoy!
Tips: Add a green veggie on the side, and/or make a fruit salad for desert to make it a balanced meal.
